Freezing Zucchini/Summer Squash

I have been looking on computer for several hours now and only found a few recipes that i can make with all of my zucchini & summer squash. but now I'm running out of patience and want to get these veggies taken care of. so I looked under freezing. I found in the freezing part that it's to be shredded, which is ok with me because that's how I had been doing for several years. but how would it to be done for casseroles when is being called for sliced, quartered, etc recipes? Is it to be frozen how the recipe calls for it?

Roasted Tomato Zucchini Soup

I found a new soup that uses a lot zucchini and summer squash. I actually ran out of zucchini this year and had to get some from the neighbor.

Chop into large pieces:
zucchini and/or yellow summer squash
tomatoes
green peppers
onions
garlic

Drizzle olive oil over mixture

Sprinkle generously with salt and pepper

Roast mixture in oven until some of the veggies get a little brownish black on top

Blend soup in food processor

You can eat the soup fresh, freeze it, or bottle it. I also the soup as a base for my homemade chili.

Absolutely delicious!
