Feezing zucchini and canning it later

Is it ok to freeze large seeded chunks of Zucchini to make canned relish at a later date? Thanks. Bev

Answer: I don't know how it will affect the texture of the relish. Freezing food and canning it later is okay.

Get freeze dried Zuccini instead

I have tried freezing it but that may not be a good long term storage solution because Zuccini just has soo much water content. After defrosting it's mostly mush. Instead you can freeze dried Zucchini and many other vegetables. No need for refrigeration.
