Can you make grape juice with unripened grapes

My wife picked grapes that had not ripened yet. Can she still make jelly, jam or juice with it? If so, what would be the difference between the "ripe" juice and the "unripe" juice?

Sour Grape Juice

When you pick the grapes before they are ripe, they are sour. Your juice will be sour.

With jams and jellies, that sour taste will not be as strong because of the added sugar.
