Whole Wheat Waffles

Make these whole wheat waffles using ingredients from your food storage.

Makes 8 waffles

Ingredients:

  • 2 cups flour (If you’re just getting used to eating wheat you can use 1 cup of wheat flour and 1 cup of white flour. Or you can just use 2 cups of wheat flour)
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons honey
  • 1 ¾ cups milk (2/3 cup nonfat dry milk and 1 ¾ cups water)
  • 4 tablespoons oil
  • 2 eggs (¼ cup powdered egg and ½ cup water)

Mix dry ingredients together, including nonfat dry milk. Stir in remaining ingredients. For lighter waffles, separate egg yolk from egg whites (if using fresh eggs). Beat egg whites until they are light and fluffy. Carefully fold beaten egg whites into batter.

Serve with delicious homemade rhubarb jam.
